I Heart Hemp Heart Pesto
I love using this to top spiralized zucchini pasta, with sautéed onion, mushrooms, and an extra sprinkle of hemp hearts. I also enjoy eating it with a spoon straight out of the bowl. It's that good. You might not think of pesto as a baby food, but this recipe is a nutrient dense way to introduce babies to leafy greens and add a more complex flavor to their foods. This pesto is also great to eat during pregnancy because the 3 cups of dark leafy’s that go into it are an excellent source of the important prenatal nutrient, folate.
Hemp heart basil pesto
2 cups arugula*
1 cup basil
½ cup hemp hearts
½ cup olive oil
3 tbsp apple cider vinegar
2 cloves garlic
½ tsp sea salt
½ tsp black pepper
Put all of the ingredients into a food processor or blender. Pulse until desired consistency is reached. Refrigerate or freeze in a sealed container.
* Feel free to experiment with the leafy greens. You can sub the 2 cups arugula for spinach, try half & half, or something else entirely.
