During early pregnancy many women notice strong cravings for starchy foods. The body is smart because food born illness is much less likely to come from sources of carbohydrate rich foods. Unfortunately, excessive amounts of starchy food can throw off blood sugar, and unbalanced blood sugar contributes to nausea or "morning sickness" in pregnancy.

Chia seed pudding contains more healthy fat and protein than cereal grains and oatmeal, to help keep blood sugar and nausea in check.

Blueberry banana chia seed pudding

  • 1/4 cup chia

  • 1 cup almond milk

  • 1/2 tsp vanilla

  • 1 tbsp maple syrup or stevia to taste

  • 1/3 cup blueberries

  • 1/2 a banana sliced

  • 2 tbsp of pecans

  • 1 tbsp shredded coconut

Combine chia, almond milk, vanilla, and maple syrup or stevia. Stir until all of the clumps dissolve. (I like to put mine in a mason jar and shake.) Cover and let sit for 20 minutes, or overnight. Top with blueberries, banana, coconut and pecans.
